Each box will contain:

• 1 kilo of handmade own recipe coarsely ground pork sausage with no rusk, just pork, herbs and seasonings.
• 1 kilo of handmade own recipe coarsely ground smoked sausage with no rusk, just pork, herbs and seasonings and looped.
• 300 grams of our beautifully seasoned coarsely ground terrine with liver, prunes, black pudding, kidney and our own incredibly tasty Gloucestershire Old Spot meat. The whole lot is wrapped in our delicious, thinly sliced belly bacon. Click on the photos below, its the one on the left.
• 1 of our 1.5 kilo chunkily rustic pork pies.
• 500 grams of smoked pork belly in a piece for you to cook with.
• 500 grams of dry salted smoky back bacon salted by us and cured with black treacle, stout, pepper, cinnamon, ginger and juniper, then sliced and packaged
• 500 grams of smoked ham brined by us and cured with black treacle, stout, pepper, cinnamon, ginger and juniper, then cooked, sliced and packaged.
• 500 grams of delicious black pudding, maybe with apples and chestnuts through it or possibly sweetbreads if we can get them.
• 250g of stuffed chine, stuffed with parsley, spring onions, (possibly wild garlic if there's any about then), roasted garlic, tarragon, sage and mace.
• 500g jar of sausage; this is a 'sausage' in the German sense of the word ie; in a jar, not a skin, made with brawn, kidneys, blood, apples, parsley, mace and pepper - delicious!
• 200 grams of smoked brawn, with capers and shallots.
• 250 grams handmade potted pork in a glass jar.

We are trying to demonstrate our ethos of nose to tail eating and also to use our own Anglo Saxon charcuterie heritage (ok so we can't think of an English word for charcuterie). We have some wonderful products in this country and it would be criminal to let them die or fade away. So hoorah for chitterlings-lets eat lots! We use no preservatives to artificially lengthen life so we will gather orders up until a cut off point before the dispatch day and make all of the product absolutely fresh, ready for your own freezer or to be gobbled up instantly. Yum!
