PETE'S PICKLES
Serves: many depending on greed
Preparation time: 4 hours
Cooking time: Half an hour
METHOD
- Slice the cucumbers crossways to make 5 or 6mm discs
- Salt both the onions and cucumbers for about 4 or 5 hours, then rinse under plenty of cold water
- Mix all the other ingredients together and bring to the boil. Simmer for five minutes and then remove the birdseyes.
- Let the whole lot cool for five minutes, then add the vegetables.
- Bottle in nice glass jars.
- Enjoy with any of our pies, cold meats, sandwiches, or on their own.
- 2 kilos baby cucumbers
- 750g finely sliced white onions
- 40g salt
- 600ml cider vinegar
- 750g sugar
- 15g mustard seeds
- 15g cumin seeds
- 8g turmeric
- 4g cayenne pepper
- 3 birdseye chillies
